Cold Dressed Spinach
Blanched spinach squeezes dry, then tangles with mashed garlic, sugar, and vinegar before sizzling hot oil pours over to release the aroma. A refreshing cold starter that is bracingly garlicky, faintly sweet, and endlessly appetite-awakening.
Instructions
- 1

Choose good spinach, wash it clean, and drain the water.
- 2

Blanch the spinach in boiling water for 1-2 minutes, take it out and cool it, squeeze out the excess water, cut into one-inch sections, and set aside.
- 3

Add a little salt and mash into garlic paste, set aside.
- 4

Add the minced garlic, drizzle with an appropriate amount of hot oil to release the aroma, and season with a little salt, sugar, light soy sauce, and white vinegar.
- 5

Just stir until evenly mixed.
- 6

Ready to serve.
- 7

Garlic-flavored and refreshing, a dish that goes well with rice.
