Roasted green beans

Roasted green beans

Green beans braise slowly for forty minutes with soy sauce, sugar, and vinegar until silky, glossy, and deeply savory. This low-oil, pantry-simple homestyle dish transforms ordinary beans into a tender-sweet accompaniment that disappears fast beside steamed rice.

Instructions

Wash the purchased green beans, cut them into 16-centimeter long pieces by hand, soak them in brine, then wash and set aside.

Pour 28 milliliters of vegetable oil into the pot, heat the oil to 120 degrees, then add the cut green beans and stir-fry for a moment.

After the green beans are all stir-fried until they change color, add a spoonful of light soy sauce, a little dark soy sauce, sugar, and vinegar.

Stir-fry the seasonings evenly so that the green beans are coated with the seasonings.

Cover the pot and simmer on low heat for 40 minutes.

After a few minutes, lift the lid, wow, the aroma is overwhelming. Just this batch of green beans could go with two bowls of rice, right?
