Chicken breast strips marinated with ginger, onion, and soy are dipped in a chewy sweet potato starch batter and fried until crisp outside, tender inside. A dusting of salt and pepper seasoning plus chili powder makes them dangerously snackable.

Prepare the ingredients: wash the chicken breast and cut it into strips, slice the onion, slice the ginger, and use this kind of granulated sweet potato starch if possible.

Add ginger and onion to the chicken breast, 1 teaspoon of salt

A small spoon of thirteen spices; if you don't like thirteen spices, you can skip it.

Add 4 tablespoons of light soy sauce.

Add 3 tablespoons of oyster sauce.

Mix well and marinate for 30 minutes to let the flavors soak in.

180 grams of sweet potato starch, 5 eggs beaten

Add about 50 grams of water and mix into a flowing paste. If you don’t have sweet potato starch, you can use cornstarch plus flour.

Pour in the marinated chicken breast strips and mix well.

Pour oil into a hot pan and heat until small bubbles appear around when a chopstick is inserted.

Place the chicken breasts coated in batter into the oil pan and fry over low heat for 3-5 minutes.

Slightly yellow in color, scoop it out.

When the oil temperature rises again, pour in the fried crispy meat and double-fry it, then remove it and drain the oil.
