Straw raincoat cucumber

Chopped with chopstick guards into stretchy accordion ribbons, the cucumber unfurls under a numbing chili-oil dressing, equal parts knife-skill showpiece and refreshing salad.

    Wash the cucumber, place chopsticks on both sides to prevent cutting through, cut diagonally, then flip and cut straight.
