Sweet and Sour Pork with Crispy Pear

Pear cubes wrapped in thin chicken breast slices are double-fried until crisp, then coated in a glossy sweet-and-sour glaze made with lemon juice, vinegar, and sugar. Pear juice marinade keeps the meat tender, and green peas add color.

    Peel the Cuiguan pear and cut it into small pieces, with some of it juiced into pear juice

    Cut the chicken breast into 1-2mm thick slices and marinate with salt and pear juice for 10 minutes

    Take a piece of chicken breast and wrap it around a piece of pear.

    Roll the entire meatball evenly in a thick layer of cornstarch

    Prepare everything as a backup.

    Heat oil in a pan until it reaches 60% hot (when a chopstick is placed in the oil, fine bubbles appear), then add the pear meatballs. Fry over medium heat until the surface sets and turns slightly yellow, then remove and drain the oil.

    Mix lemon juice, balsamic vinegar, sugar, and water evenly.

    Heat the oil to 80% of its maximum temperature and fry again for 30 seconds, until it is golden and crispy all over, then remove and drain the excess oil.

    Leave a little bit of oil at the bottom of the pan, pour in the prepared sweet and sour sauce, stir over low heat until the sugar is completely dissolved, drizzle in the cornstarch water and turn off the heat, then quickly toss the fried pear meatballs in the sweet and sour sauce until they are all coated with the sauce.
