Grated Potato
Coarse potato shreds are coated lightly with flour, steamed until tender, then loosened and pan-fried with fragrant scallion greens. A rustic northern Chinese specialty that turns humble potatoes into chewy, golden bites with a wonderfully savory finish.

Wash the potatoes and peel them

Grate into coarse shreds using a grater

Mix in the flour, not too much, just enough to coat each piece evenly.

Spread evenly and separate any sticking parts

Add an appropriate amount of water to the steamer and bring it to a boil

Chop a small bowl of green onions

After the water boils, steam on high heat for 8 minutes

After steaming, pour it out and spread it to cool, separating any parts that are sticking together.

Pour oil into the pan and heat until it reaches 70% hot.
