A braid of milk bread

A braid of milk bread

Easy and satisfying, A braid of milk bread uses high-gluten flour, low-gluten flour and dry yeast and is baked until golden and fragrant. A great choice for family gatherings or a weekend treat.

Instructions

  1. 1
    Step image

    Materials are ready;

  2. 2
    Step image

    Put all ingredients except the butter into the dough mixer, mix at low speed until a dough forms, then beat at high speed until a rough membrane forms;

  3. 3
    Step image

    Add the softened butter;

  4. 4
    Step image

    Mixing at low speed allows the butter to fully incorporate into the dough. Mix at high speed until the dough is soft and delicate, not sticking to the bowl or hands, and can stretch into a thin, translucent, elastic film.

  5. 5
    Step image

    Shape the dough into a round and place it in a fermentation box for primary fermentation in an environment not exceeding 28 degrees.

  6. 6
    Step image

    Let the dough rise until it doubles in size, then dip your finger in flour and poke a hole in the top of the dough; it should not collapse or shrink back.

  7. 7
    Step image

    Weigh the dough and divide it into 8 equal portions, place them in a container, and let them rest for 10 minutes.

  8. 8
    Step image

    Roll the dough into noodles about 50 cm long. You may not be able to roll them that long at once, so you can roll them in 3-4 sessions. Let them relax a bit after rolling a little. Remember the order of the 8 noodles to prevent them from breaking due to insufficient relaxation.

  9. 9
    Step image

    The exciting 'one braid' is here, and you can make it as long as you want: the method is hard to describe in words, so I'll just show the pictures; if you still don't understand, you can watch the video of the same bread on my homepage;

  10. 10
    Step image

    Twist the ends of the braided dough to a point and smooth them out, so the baked product will not be too thick at both ends.

  11. 11
    Step image

    I put it directly in the oven for the second fermentation, set the temperature to 35°C, and spray a little cold water to increase humidity;

  12. 12
    Step image

    Let the dough rise to nearly twice its size, brush the surface with egg wash, and sprinkle with cheese powder;

  13. 13
    Step image

    Place it in the middle layer of a preheated oven, bake at 180°C with both upper and lower heat for about 20 minutes;

  14. 14
    Step image

    After coming out of the oven, move it to a cooling rack, and once cooled, store it in a storage box. It can be eaten directly or made into sandwiches or burgers.

    Braided milk bread, super soft, awesome!
