Instructions
- 1
Prepare all the ingredients.
- 2
Place all the dough ingredients except for the butter into the mixing bowl of the stand mixer. Start the mixer and mix the ingredients at low speed, then gradually increase the speed to knead the dough until it reaches a rough dough stage.
- 3
Add the softened butter and continue beating until it can stretch into a relatively firm, transparent film.
- 4
Gather it smoothly and place it into a fermentation box, ferment at 25 degrees until it doubles in size.
- 5
After a simple degassing, divide evenly into 9 portions, quickly gather them and place into the fermentation box, and let rest for 15 minutes.
- 6
Take out a rested dough and roll it out lengthwise.
- 7
Flip it over, lay it horizontally, and gently pull it into a rectangle.
- 8
Roll it up from top to bottom into a long strip.
- 9
Place the connectors facing downwards in order, preferably with all connectors facing the same direction.
- 10
Ferment in the oven at 38°C until it doubles in size (1.5-2 times), and when you gently press the surface with your finger, it slowly bounces back. Then lightly brush a layer of whole egg wash on the surface.
- 11
Finally, put it into the preheated oven and bake at 180 degrees with a fan for about 18 minutes.
- 12
Remove from the mold immediately after baking, and seal for storage after cooling.
