A universally loved versatile delicacy [Fermented Black Bean and Fresh Chopped Chili]
Sun-dried chilies are chopped by gloved hands and tossed with garlic, ginger, black beans, salt and liquor, a versatile fresh-ground chili relish for everyday cooking.
Instructions
- 1
Prepare all the materials.
- 2
After washing the chili peppers, let them dry and then remove the stems (do not remove the stems at first, to prevent water from getting in and making it difficult to dry).
- 3
After drying, chop the chili peppers 2-3 times (be sure to wear gloves).
- 4
Garlic and ginger are also all chopped.
- 5
Put the chopped chili, garlic, and ginger into a large bowl, and add salt, chicken bouillon, sugar, and white wine.
- 6
Stir evenly while wearing disposable gloves.
- 7
After mixing the chopped chili, cover it and let it sit for more than 3 hours.
- 8
After heating the pot over high heat, pour in the oil (add more), and then add the fermented black beans to stir-fry until aromatic.
- 9
Pour in the chopped chili.
- 10
Stir-fry over high heat for about 5 minutes (you can taste it and add seasonings as needed). After cooling, put it into a clean, dry, and oil-free glass jar, store it in the refrigerator, and it can be eaten after 3 days.
