Amaranth should not just be stir-fried; simply tossing it makes it crispy, fragrant, and delicious.
Tender amaranth is blanched, shocked and squeezed dry, then tossed hot with aromatics for a bright, garlicky summer side.
Instructions
- 1

Prepare the ingredients.
- 2

After removing the roots of the amaranth, wash it clean and soak for about 15 minutes, then drain the water and set aside. Add an appropriate amount of water to a pot, add 1 teaspoon of salt and a few drops of cooking oil (to maintain the natural color of the ingredients). Bring to a boil, then put in the amaranth and blanch for about 2 minutes. Remove it and place it in prepared cold boiled water to cool, drain it, squeeze out the water, and cut it into small sections.
- 3

Heat the wok and add cooking oil, then pour in the peanuts and stir-fry. When the popping sound begins to fade, reduce to low heat and stir for a while, then remove and let cool.
- 4

Seasoning sauce: Crush the garlic cloves into a paste, then mix with 2 tablespoons of organic soy sauce, 1 gram of sugar, and sesame oil until well combined.
- 5

All ingredients have been processed.
- 6

Pour the seasoning sauce into the amaranth and mix well.
- 7

Then add the peanuts and mix evenly.
- 8

Plate and serve.
- 9

Crispy and delicious, especially suitable for eating in this hot summer.
