Apple, Red Date, and White Fungus Soup
A silky sweet soup of slow-simmered white fungus cooked until gelatinous, joined by apple chunks and red dates for a delicate, naturally sweet tonic.
Instructions
- 1

Prepare the ingredients: 1 white fungus, 2 apples, and an appropriate amount of red dates.
- 2

First, clean the white fungus in advance and soak it in cold water until it is ready to use. Remove the roots from the soaked white fungus, tear it into small pieces, then put it into a clay pot and add enough water.
- 3

Reduce the heat from high to medium-low and simmer until the white fungus starts to become sticky, then add the cleaned and soaked red dates.
- 4

Continue simmering until the white fungus becomes gelatinous, then add an appropriate amount of rock sugar.
- 5

Peel and core the apple, then cut it into small pieces.
- 6

Put it into the clay pot and simmer until the apples become soft, then you can turn off the heat.
- 7

Fragrant and sweet, the soft and glutinous apple, red date, and white fungus soup is perfect for winter; a bowl warms both the stomach and the body.
