aspic
Rendered and cleaned pork skin sets into a translucent, bouncy aspic after an hour of steaming, served in neat chewy cubes.
Instructions
- 1

This is pork skin that has already been cleaned. Boil it in hot water until it softens.
- 2

Go over the grease again, wash it clean, and cut it into shreds.
- 3

Put into a container and add an appropriate amount of water, with a little salt for flavor.
- 4

Steam the pork jelly over water for 1 hour, take it out to cool, and trim off the edges.
- 5

Cut into thick slices.
- 6

Cut into small square shapes, plate it, and it's ready to serve—crispy, chewy, and springy.
