Assorted Fried Rice with Egg
Classic wok-fried rice using chilled overnight grains tossed with tiny cubes of carrot, cucumber, sweet corn, and silky egg for distinct, springy, subtly sweet bites.
Instructions
- 1
First, prepare the ingredients for the assorted fried rice: peel the carrot and cut it into very small cubes, wash the cucumber and cut it into small cubes, wash the green onions and chop them finely, and adjust the number of eggs according to the amount of rice and how much will be eaten;
- 2
The rice must be leftover rice, preferably refrigerated in the fridge overnight. At this point, the rice grains are distinct, and some of the moisture has evaporated in the fridge, so when stir-frying, the rice does not break apart and is not hard enough to scratch your throat;
- 3
Pour an appropriate amount of oil into a non-stick frying pan. When the oil is half-hot, pour in the beaten eggs. Use chopsticks to stir in one direction. After the egg mixture gradually solidifies, use chopsticks to break it up in irregular directions. This way, the scrambled eggs will be almost uniform in size.
- 4
Add the diced carrots to the pan and stir-fry a few times. Carrots are fat-soluble vegetables, and only after coming into contact with oil can their carotene be converted into vitamin A, which is beneficial for the eyes if eaten regularly. Carrots are not easy to cook, so they should be diced very small and added to the pan first.
- 5
Pour the rice, which has been broken up with a spoon in advance, into the wok. At this time, it is not advisable to use low heat; at the very least, switch to medium heat. Stir the rice, and if there are large clumps, use a spatula to break them up. Do not press down. Keep stir-frying continuously so that the rice is heated evenly. Very quickly, you will see steam rising, and the grains of rice will be separate.
- 6
When the water vapor has mostly evaporated, sprinkle an appropriate amount of salt according to taste and mix evenly.
- 7
Pour the diced cucumber into the pan and stir-fry a few times;
- 8
Turn off the heat before taking the pan off, pour the chopped green onions into the pan, and mix briefly before serving. At this point, the cucumber and green onions still remain bright green, the cucumber is crisp and tender, and the aroma of the green onions is fully released; each grain of rice is separate and chewy, with the fragrance of eggs, the freshness of cucumber, and the nutrition of carrots.
