Authentic Sichuan Pickles
A time-honored Sichuan crock comes alive with cooled brine, liquor, green peppercorns, young ginger, and carrot slices, building the tangy, aromatic base of a true homemade pickle.
Instructions
- 1

Buy a jar from the vegetable market, boil and cool purified water until it is completely cool. Pour it into the jar, half of the jar is enough, then pour in the white liquor, and place water along the rim of the jar up to half the rim.
- 2

Add the pickling salt into the jar
- 3

Add green Sichuan peppercorns
- 4

Wash the green garlic, remove the outer skin, dry it, wipe off any moisture, and put it in
- 5

Add the young ginger; the original picture is no longer available.
- 6

Cut the carrots into slices and put them in. This can be eaten after marinating for one or two hours.
- 7

For better sealing, you can add a layer of plastic wrap under the lid.
- 8

A jar of well-pickled kimchi
