Prepare all the ingredients and tools.

  2. 2
    Step image

Separate the egg whites and yolks of 5 eggs, and set aside another egg to use for brushing the egg wash.

  3. 3
    Step image

Make the puff pastry: Rub 250 grams of butter into 600 grams of flour, then add 6 grams of baking powder and mix well.

  4. 4
    Step image

Make the puff pastry: Add the egg yolk and sour cream, and knead into a dough. It's okay if the dough is not smooth.

  5. 5
    Step image

Make the puff pastry: Divide the dough into three equal parts, shape each piece into a ball, cover with plastic wrap, and refrigerate for 1 hour.

  6. 6
    Step image

Weigh out 300 grams of raisins and 250 grams of walnut kernels, chop them (not too finely, leaving some texture) and mix them for later use. Set aside some whole walnut kernels for decoration.

  7. 7
    Step image

Whip the egg whites with an electric mixer, adding a small spoon of lemon juice midway. When the egg whites start to turn white and have a lot of bubbles, gradually add 200 grams of sugar in batches.

  8. 8
    Step image

After adding all the white sugar, continue to beat the egg whites until the texture is soft, loose, and somewhat sticky.

  9. 9
    Step image

Take out the chilled dough and roll out the pastry. The size should match the inner circle of the baking pan.

  10. 10
    Step image

Spread the beaten egg whites, using half of the amount, on the first rolled-out puff pastry. Sprinkle with chopped raisins and walnuts.

  11. 11
    Step image

Lay a layer of puff pastry and repeat the previous step. Lay the third layer of puff pastry and brush with egg wash (previously reserved one egg, beaten into egg wash).

  12. 12
    Step image

Gently score the surface of the puff pastry and place whole, attractive walnuts on top. Preheat the oven to 180 degrees and bake for 25 minutes.

  13. 13
    Step image

Heat 100 grams of honey over low heat, add 50 grams of butter halfway through, and turn off the heat once the butter has melted.

  14. 14
    Step image

After the pastry is colored, take it out, cut open the first layer along the pattern, and evenly drizzle in the honey.

  15. 15
    Step image

Put the baking tray back into the oven and bake at 180 degrees for another 10 minutes.

  16. 16
    Step image

After baking, remove the baking tray to cool, and cut the pastry completely along the patterns.
