Bamboo Fungus and Scallop Soup
An elegant clear soup pairing rehydrated dried scallops and their soaking liquid with delicate bamboo fungus, prized for a clean, umami-rich broth.
Instructions
- 1

Wash the scallops clean and soak them in hot water with clean water, then put them directly into the pot to cook. Soak for about an hour, soak them in advance.
- 2

Soak the bamboo fungus in cold water for about 15 minutes to remove some of its taste. When preparing the other dishes, soak the dried scallops first, and just before starting to cook the soup, soak the bamboo fungus.
- 3

Pour the dried scallops and scallop water into a pot, bring to a boil over high heat, add the bamboo shoots, simmer over low heat for 10 minutes, add chicken essence, MSG, and salt, sprinkle with chopped green onions, and it's ready. Fresh, delicious, and healthy soup.
