Bath kimchi

Bath kimchi

Lightly sweetened brine with Sichuan pepper and star anise turns assorted vegetables into crisp bath pickles, a Sichuan-style jar that stays refreshingly mild.

This is the 'Lock & Lock' food container I use at home. When filling it with water, you can just use purified water without boiling it. The advantage of doing this is that in the future, even when adding new food, it won't mold even if the water vapor hasn't completely dried. I don't understand the reason why.

The ingredients for the brine are very simple: ordinary salt, a little white sugar, dozens of Sichuan peppercorns, 2 or 3 star anise, and an appropriate amount of fresh small chili peppers (depending on how spicy you like it). Remember: when buying small chili peppers, be sure to select ones with no surface blemishes and with intact stems. Once home, use scissors to trim any excess stems; do not pull them off by hand, otherwise the small chili peppers can easily become soft. It is very important to keep the stems of the small chili peppers intact.

The ingredients for pickling are the traditional ones: young ginger, celery, zucchini, radish skin, Chinese cabbage hearts, cabbage, celtuce, or young cucumber (the seeds must be removed, no matter how tender). It should be noted that zucchini does not easily absorb flavor and should be cut thinly, while cucumber and celtuce tend to become soft and should be taken out in time (generally no more than two days). All ingredients should be cut into strips (or slices).

When starting to add water for the first time, cut the small chili diagonally to quickly release the flavor; afterwards, you can add them whole. Put the prepared ingredients into a LeleKou food container, and add the various seasonings as well, using slightly more salt than usual for soups and dishes. After adding the ingredients, add drinking water.

Put all the main and auxiliary ingredients into the Lock & Lock container. When the temperature is relatively low in winter, or if you want the lactic acid bacteria to ferment quickly, you can add a little fresh yeast for making yogurt, about 0.5–1 gram is enough.

After packing, it needs to be put in the refrigerator so it won't spoil and will taste good.
