Bean Cake (Moon Cake)
Savory fried cakes made from a light rice-flour batter studded with mung beans, sesame, and scallion, crisp outside and tender inside.
Instructions
- 1

Wash the mung beans thoroughly and soak for 10 minutes.
- 2

Get glutinous rice flour and wheat flour ready.
- 3

Add water and stir evenly.
- 4

Relatively thin batter.
- 5

Add salt, white sesame, and five-spice powder, and mix evenly.
- 6

Add soybean powder (if you don't have it, you can skip it) and mix evenly.
- 7

Add chopped green onions and mix evenly.
- 8

Drain the water from the mung beans.
- 9

Add the mung beans and stir evenly.
- 10

Heat oil in a pan, and put the mold into the oil to heat together, making it easier to demold.
- 11

When the oil is half hot, spoon in half a spoon of mung bean flour batter.
- 12

Put it into the oil pan (keep the heat medium-low throughout) and fry until fragrant.
- 13

After frying for one to two minutes, it will float up and automatically release from the mold. Flip it over and fry until both sides are golden, then remove from the pan.
- 14

Drain the oil.
- 15

Alright, crackling crisp!
