Beef Claypot Rice
Cantonese-style claypot rice cooked low and slow until a crisp golden crust forms, topped with oyster-sauce-marinated beef and snap peas for smoky, savory contrast.
Instructions
- 1
Cut the beef, then marinate it for a while with oyster sauce, light soy sauce, and oil.
- 2
Snap peas should be shelled, washed, and set aside.
- 3
Soak the rice in a clay pot for half an hour, then cook it over heat. When the rice begins to absorb the liquid, simmer over the lowest heat. Once the rice has dried, drizzle a little oil along the edges of the pot, then use low heat to make the crispy rice crust.
- 4
Stir-fry the green beans over high heat until just cooked, then transfer them out and set aside.
- 5
Stir-fry the beef over high heat until it is 90% cooked, then put it into a clay pot and simmer over low heat for two minutes before serving.
