Birthday cake
Birthday cake made with egg, low-gluten flour and cornstarch, baked until light, fluffy and golden. Easy to follow with simple step-by-step instructions.
Instructions
- 1

Separate the egg yolks from the egg whites (my eggs today are very, very small. I weighed them and they weren't heavy enough, so I used 7 eggs, but the rest of my ingredients like low-gluten flour are for 6 eggs). Then cover the egg whites with plastic wrap and refrigerate for later use.
- 2

Pour the milk and oil into a bowl and stir until emulsified.
- 3

Add the sifted low-gluten flour and continue mixing until even.
- 4

Add the egg yolk and continue to mix evenly, then set aside, and then beat the egg whites.
- 5

Take the egg whites out of the refrigerator, add lemon juice or a few drops of white vinegar, and beat until it forms fish-eye bubbles like this, then add white sugar (because my best friend can't eat sugar, I used xylitol instead).
- 6

Continue beating until lifting the beater forms an inverted triangle.
- 7

Add 1/3 of the meringue to the egg yolk mixture and gently fold from bottom to top until well combined, then continue to fold the remaining meringue in the same manner until evenly mixed.
- 8

Add 3 grams of cooking oil to the cocoa powder and melt it, then take an appropriate amount and mix it evenly with the prepared cake batter before putting it into a piping bag.
- 9

After casually placing them on the baking tray, put them into the oven preheated to 175 degrees and bake for one minute, then take them out.
- 10

Pour the remaining cake batter into the oven.
- 11

Lift the baking tray and shake it so that the cake batter spreads evenly over the tray, then put it in the oven and continue baking for 15 minutes before taking it out.
- 12

After taking it out, invert it onto the cooling rack and the cake will gradually fall off by itself; the cake with a towel pattern is then done baking.
- 13

Use a 6-inch mousse mold to cut out three cake layers, then according to the size of the cake you want to make, cut two strips and place them like in the picture.
- 14

Add the whipped cream, then put in the chopped strawberries and cover with a piece of cake base, then repeat the previous steps of adding cream and strawberries.
- 15

Then cover the surface with the cake base, and it will look like the picture.
- 16

Then spread a one-centimeter-thick layer of cream on the surface, and then just smooth it out a little.
- 17

By adding some bought decorations and strawberry-flavored Oreo cookies, a birthday cake is complete.
- 18

Pack it well and send it to your best friend.
