Bitter Vegetable and Pork Large Intestine Soup
Pork large intestine scrubbed with flour and oil, then pressure-cooked with bitter greens, a bracing soup prized for its rich, tender offal.
Instructions
- 1

First rub the large intestine with flour, then rub it a second time with cooking oil. Blanch the cleaned large intestine in water, then rinse it with cold water, and cut it into small sections.
- 2

Place a small steaming rack inside the pressure cooker.
- 3

First, put some water into the electric pressure cooker, then use a stainless steel bowl to hold clean water and pork intestines, place it into the pressure cooker, and press the rice cooking button to start pressurizing.
- 4

Choose and clean the bitter vegetables and set them aside.
- 5

After the electric pressure cooker stops working, cut off the power in time, and once the pressure is naturally released, take out the stewed pork large intestine soup.
- 6

Boil a pot of water, add a few drops of cooking oil to the water, put in the prepared bitter greens, and blanch for 1 minute to remove some of the bitterness.
- 7

Put the blanched bitter vegetable into the large intestine and cook together until it boils.
- 8

Just add a little salt and chicken essence for seasoning.
