Black Sesame Multigrain Bun
A fluffy steamed bun wrapped around a hearty filling of black rice, glutinous rice, adzuki and kidney beans simmered with red dates, brown sugar and condensed milk, with ground black sesame worked into the dough.
Instructions
- 1

Clean 100 grams of black rice, 150 grams of glutinous rice, 100 grams of red adzuki beans, and 100 grams of red kidney beans.
- 2

Put it into the rice cooker, add 130 grams of washed red dates, and cover the ingredients with water.
- 3

Cooked.
- 4

Add brown sugar and condensed milk, mix evenly, and the filling is ready.
- 5

250g flour, 5g yeast, 10g sugar, 10g lard, 40g black sesame.
- 6

Stir until large clumps form.
- 7

Knead into a smooth dough.
- 8

No need to proof, roll into long strips, and cut into small portions of 70–100 grams each.
- 9

Take a portion of dough, roll it into a round wrapper, fill it with the stuffing, pinch the bottom tightly, shape it into a ball, tidy it up a bit, and slightly shape it taller.
- 10

Place them one by one into the steamer, leaving gaps in between, and let them ferment in a warm place until they double in size (nowadays with high temperatures, it takes about 40 minutes).
- 11

Put cold water in the pot, turn to high heat, start timing when it begins to produce steam, steam for 12 minutes, then continue steaming off the heat for 5 minutes.
- 12

Alright.
- 13

Send a finished product picture.
- 14

Delicious and nutritious.
