Black Whole Wheat Pork and Carrot Bun

Black Whole Wheat Pork and Carrot Bun

Hearty steamed buns made with dark whole-wheat flour for a nutty, wholesome crumb, stuffed with well-seasoned pork and fine carrot shreds for juicy, savory-sweet filling.

Instructions

  1. 1
    Step image

    First knead the dough. Put the flour and dry yeast into a bowl and mix well; the ratio of black whole wheat flour to wheat flour can be adjusted according to preference. Black whole wheat flour has poor gluten strength, so adding some wheat flour can increase the elasticity, making the buns less likely to break.

  2. 2
    Step image

    Add room temperature water, first stir into a flocculent state, then knead into a dough that is neither soft nor hard, cover with a lid, and place in a warm spot for basic fermentation;

  3. 3
    Step image

    Wash the carrots clean, shred them finely, then chop them shorter with a knife;

  4. 4
    Step image

    Prepare the minced meat, with a little bit of fat; finely chop the green onions and ginger.

  5. 5
    Step image

    Pour a small amount of oil into the wok, first sauté the minced ginger until fragrant, then stir-fry the minced meat until it changes color, sprinkle with salt, pour in light soy sauce, sprinkle with chopped green onions, and mix evenly;

  6. 6
    Step image

    Stir-fry the carrots in the pot until they become soft, turn off the heat, and let them cool before use;

  7. 7
    Step image

    Let the dough rise until it doubles in size;

  8. 8
    Step image

    Sprinkle a handful of flour, knead the dough until smooth again, roll it into a long strip, cut it into evenly sized pieces, and roll each piece into a round shape that is slightly thicker in the center and thinner at the edges;

  9. 9
    Step image

    Place an appropriate amount of filling on the round wrapper; the amount depends on your own skill.

  10. 10
    Step image

    You can wrap buns in this wheat-ear shape, or you can also shape them differently;

  11. 11
    Step image

    Place them in the steamer, lightly brush some vegetable oil on the steaming mat or tray, so that the bottoms of the buns won't stick when you lift the lid and can be easily removed. If you don't brush oil, due to the high proportion of black whole wheat flour, the bottoms can easily break;

  12. 12
    Step image

    Steam the raw dough when it has expanded slightly more than before and feels noticeably plump. After it starts steaming, cook for about 20 minutes, then let it rest for 5 minutes before removing from the steamer.

    Black whole wheat pork and carrot buns, savory and delicious, nutritious and healthy!
