Braised Duck Feet and Duck Wings
A beloved cold appetizer where duck feet and wings simmer slowly with star anise, bay leaves, Sichuan peppercorns and honey dark soy until deeply savory and tender.
Instructions
- 1

Collection of main ingredients.
- 2

Clean the duck feet and duck wings, put them into cold water to blanch, and cook until the white foam no longer increases noticeably.
- 3

After blanching, rinse the duck feet and duck wings and place them in the rice cooker.
- 4

Add ginger, garlic, chili, bay leaves, star anise, tsaoko, galangal, and Sichuan peppercorns.
- 5

Add about 2 tablespoons of salt, approximately 30 grams.
- 6

A spoonful of light soy sauce.
- 7

A tablespoon of honey soy sauce for braising (if you add this, you don’t need to add sugar).
- 8

Add enough water to cover the ingredients, stir a few times, and cook for 30 minutes.
- 9

Take out the cooked duck wings and duck feet and let them cool. If you want a stronger flavor, you can wait until the marinade has cooled, then soak the duck feet and wings overnight.
- 10

Eat it directly for a refreshing and chewy texture. For stronger flavors, you can add some ginger, garlic, vinegar, chili oil, and eat it as a cold dish.
