Braised Egg Custard

Braised Egg Custard

A baby-friendly steamed egg custard whisked with double water and strained for silkiness, steamed until wobbly and topped with a savory glaze of salmon, vegetables, and tomato.

Instructions

1 egg, 6g instant oats, 30g salmon, 30g vegetables, half a tomato, 1 shiitake mushroom. Cooking method: steaming, stir-frying. Recommended age: 9 months. Preparation time: 15 minutes.

Beat the eggs, add twice the amount of water as eggs, and mix well. If you haven't eaten egg whites, just use the yolks.

  3. 3

Sift and remove the scum on one side. Tips: Don’t mind the trouble; with this step, your steamed egg will have a smooth, mirror-like surface without any holes.

Instant oats are added to the beaten eggs. Tips: When steaming egg custard, add a handful of instant oats to steam together. This makes the custard texture richer and can also help prevent constipation. Besides egg custard, after mixing various salads, sprinkle a handful of instant oats and mix them in for eating—it tastes very good too. When making buns, bread, or cookies, sprinkling some oats also works very well.

Cover the steamed egg custard with cling film, and steam on high heat for 10 minutes after the steamer is steaming. Tips: Some mothers reported that even steaming the egg custard for 20 minutes doesn't cook it. Possible reasons: 1. The heat is too low. 2. A shallow but deep bowl was used, making it hard for the custard to cook. 3. Too much water was added, preventing the egg from solidifying. Take it out when the time is up; do not continue to steam, as over-steaming will make the custard tough.

Look, the surface of the egg custard is very smooth. The oats have sunk to the bottom, so you can't see them on the surface. If you don't add salmon and vegetables, you can stop here.

Minced mackerel, chop the greens, tomatoes, and shiitake mushrooms. The size depends on your baby's chewing ability; for those under 1 year old, you should remove the tomato skin first.

  8. 8
    Step image

Heat the pan with oil, stir-fry the tomatoes, and cook until the tomatoes are soft and release their juice.

Add the shiitake mushrooms, add a little water, and cook for 1 minute.

Add some green vegetables and salmon, then add a little water, and cook for another 2 minutes before serving. Tips: You can add more or less water here. If you add less, it will be absorbed by the end, and there won't be much sauce, so you can eat the stir-fried salmon and vegetables together with the steamed egg custard. You can also add more water, so that a bit of sauce remains at the end, which is also great poured over the steamed egg custard.

Wen fish vegetable juice is poured over the steamed egg. One bite contains egg, oats, fish, mushrooms, tomatoes, and green vegetables. Paired with some staples, it's enough for a meal.
