Braised pork knuckle sandwich
Shredded braised pork knuckle stuffed into a split flatbread, the meat simmered with ginger, star anise and Sichuan pepper until spoon-tender, then piled in with its own juices.
Instructions
- 1
Soak the fresh pork bones in clean water for half an hour, then rinse them thoroughly and set aside.
- 2
Boil water in a pot and add cooking wine, then put in the pork knuckle to blanch until partially cooked, removing excess fat and impurities. After that, put it in cold water to cool and rinse several times until clean.
- 3
Put the sliced ginger, Sichuan peppercorns, and star anise into the seasoning box and fasten it tightly.
- 4
In another pot, place the pork knuckle and the seasoning box into clear water, then add sugar and cooking wine and bring it to a boil over high heat.
- 5
Put an appropriate amount of flour into a container, mix the yeast powder with warm water, and pour it into the flour to start kneading the dough.
- 6
Cover the well-kneaded dough with a cloth and let it rise until it doubles in size, then take it out and knead the dough to release the air.
- 7
Cut the kneaded dough into small pieces of even size.
- 8
Take a piece of dough and roll it into an oval shape.
- 9
Roll it up from one side, stand it up, and press it flat from bottom to top.
- 10
Roll the flattened dough into small cakes of even thickness, not too thin. Let it rest for fifteen minutes.
- 11
Place the risen dough into the electric griddle and cook both sides until golden brown and layered.
- 12
When the pork knuckle is braised to about seventy percent cooked, add Yipin fresh soy sauce, oyster sauce, salt, and MSG, then reduce to medium heat and continue to braise until fully cooked and flavorful, with the meat separating easily from the bone and becoming even more tender.
- 13
Take out the pork knuckle meat and let it cool until it is no longer hot to the touch.
- 14
Chop the pork knuckle meat into small pieces and add the chopped onions and cilantro.
- 15
Mix the minced meat evenly until it is flavored, or you can add various seasonings according to your own taste.
- 16
Peel open the baked sandwich from one side and add an appropriate amount of filling.
- 17
The delicious and tasty braised pork knuckle stuffed in a bun is ready when placed on a plate.
- 18
It’s super great to eat it with fresh small fruits, eggs, seafood, and milk.
