Braised Pork Rice
Homey braised pork rice: skin-on pork belly is rendered golden, then pressure-braised with soy sauces, rock sugar and a spice pack until silky, sweet and melt-in-the-mouth.
Instructions
- 1
Put oil in the pan, press the fat out of the meat, and fry until it is slightly golden (❗️I didn't remove the skin from the meat here, hot oil will splatter when it meets the skin, so you need to cover it with a lid).
- 2
Keep the oil in the pot, take the meat out and put it in the pressure cooker. Add 2 tablespoons of soy sauce, half a tablespoon of dark soy sauce, an appropriate amount of brown sugar (adjust to your taste), a small piece of rock sugar, a suitable amount of salt, and a packet of your usual seasoning mix. Cook for about 10 minutes, and if you like it softer, cook for an extra 5 minutes! There isn’t an exact ratio here—if you like it sweeter, add more sugar; if you like it saltier, add more soy sauce. Adjust according to your usual taste!
- 3
Add side dishes, put in whatever vegetables you like, a bowl of rice with meat, vegetables, and egg, make it simple!
