Braised Pork Rice (Learned from Royal Lava Bun)

Taiwanese-style braised pork rice, where minced pork belly simmers in soy and five-spice and is crowned with crisp fried shallots for a glossy, deeply savory sauce over rice.

Instructions

  1. 1

Scoop a few spoons of lard with a spatula first, melt it, and fry the diced red onions until crispy! If that’s not enough, add a few more spoons of lard to fry the onions until crispy! Fry over medium-low heat! Fry until an enticing golden color, and then it’s ready to take out! (I don’t know why, but every time I chop onions, the scene of the character played by Wallace Huo in 'Wu Shi Lang' chopping onions appears to me. I’ve never shed a single tear chopping onions before! Wallace Huo, you should awaken and stop haunting me! Although, back then, I liked Chen Yuwei!)

  2. 2

You don't need to discard the onion oil in the pot; this is the essence of braised pork rice. Add the prepared slices of ginger and garlic, sauté on low heat until fragrant, then add the pork belly strips. Cook the pork strips until they start to turn golden brown!

  3. 3

Add diced shiitake mushrooms, minced scallions, 3 tablespoons of dark soy sauce, 3 tablespoons of yellow wine (which is cooking wine), 1 tablespoon of fermented bean curd sauce (I want to show off again, my dad bought a huge jar of fermented bean curd! Hahaha!), then add two star anise and a small handful of rock sugar.

  4. 4

After the fire boils, transfer a large pot of stuff to a pot that can be used on an induction cooker, set a countdown for 90 minutes (1 hour 30 minutes), then pour it out at 34 minutes, I think it's fine, done!

  5. 5

Start blanching the greens and boiling the eggs! Boiling eggs: Use a small saucepan with just enough water to cover the eggs, add a little salt, bring to a boil over high heat, then cook for 10 minutes. Blanching greens: Boil a pot of water, and once it boils, cook until the color changes! (Grandma taught me)

  6. 6

How to get lard: Clean the pot, dry it, put the cleaned and diced pork fat into the wok, and slowly (Mom, help!) watch it. Once all the oil has been rendered, take out the cracklings, pour the lard into a large bowl, cover it with a big plate, and quietly wait for it to turn snow white! That's it! (My dad made it!)
