Braised Small Cold Dishes
Soybeans and peanuts soaked overnight are simmered with star anise, cinnamon and Sichuan peppercorns, then finished with plenty of chopped cilantro for a hearty, rustic cold platter.
Instructions
- 1
Wash the soybeans and put them in a small bowl. Add cold water and soak them for more than a day and night.
- 2
Wash the peanuts and put them into another small bowl, add cold water, and soak for more than a day and night.
- 3
About 250 grams of coriander, washed clean, rinsed with pure water, chopped, and set aside.
- 4
Take a dozen or so Sichuan peppercorns, 2-3 star anise, and a piece of cinnamon, and put them into the seasoning box.
- 5

- 6
Pour the marinated cooked peanuts and soybeans, along with the marinade, into a clean large bowl and let it cool.
- 7
Add the chopped cilantro and mix well.
- 8
Each time you eat, take a small plate or small bowl to serve a portion for consumption.
