Breakfast fried dough sticks

Breakfast fried dough sticks

Overnight-risen dough strips pressed together in pairs and deep-fried until puffed and golden, Chinese breakfast crullers with a crisp shell and a light, airy crumb.

Instructions

  1. 1

I made the dough last night. This morning, I took out the dough (no need to knead it again), rolled it into a long strip, and then cut it into evenly sized small strips.

Every other strip has a water line applied to the middle, and is overlapped with another strip that has not been wetted. Press the line in the middle with chopsticks.

I fry youtiao using oil only once, so I don’t put too much oil in the pan, which is why I cut the youtiao into smaller pieces (to make them easier to fry).

Heat the oil in the pan until it reaches about the sixth level of heat, then put the small fried dough sticks into the pan. The large fried dough stick was cut into small pieces (so one side opened up during frying; next time, you can cut it into small pieces first and then brush with water).

Flip continuously until fried to a golden color, then remove.

Fried a whole batch (shape didn’t turn out very nice), but it tastes really fragrant!

This is black soybean powder. First, add it to warm water and stir until there are no lumps, then pour in boiling water and stir to make it very smooth. You can add sugar if you like, in an appropriate amount (I don’t like to add sugar).

Freshly fried youtiao, crispy and fragrant, paired with a cup of black soybean milk, a simple breakfast that is truly satisfying.
