Breakfast side dish with porridge — Spicy Stir-fried Pickled Cowpeas
Weeks in an old brine crock turn cowpeas pleasantly sour before a quick wok toss with dried chili and garlic. A punchy companion to morning congee.
Instructions
- 1

Wash the cowpeas and drain the water (there must be no raw water)
- 2

Then soak it in the jar (the jar contains prepared old brine) for about a week, and it will be ready. It can also be for a longer time.
- 3

Scoop the cowpeas out of the jar and rinse them with clean water (to remove some of the salt).
- 4

Cut the soaked cowpeas into small granules.
- 5

Cut the dried chili peppers and garlic into sections.
- 6

After heating the oil in the pan, add the dried chili peppers and garlic to stir-fry.
- 7

Then add the soaked cowpeas and stir-fry together
- 8

Stir-fry for a little while, add a small amount of MSG, and it can be served.
