A colorful one-bowl soup where shrimp shells are fried for briny oil, then broccoli, carrot, and mushrooms simmer with peeled shrimp and golden egg strips in a fresh seafood broth.
Instructions
- 1

Required ingredient diagram. You only need 5 pieces of broccoli, 1/3 of a carrot, and 1/2 of a seafood mushroom. I am making a portion for one person, so I used all the ingredients below.
- 2

Remove the shells and vein from the shrimp, wash the seafood mushrooms and cut them, peel and slice the carrots, wash the broccoli and divide each floret into two, beat the eggs in a plate and fry them, set aside for later use.
- 3

Add oil to the pan, and when the oil is hot, add the shrimp shells and onions. Stir-fry to release the shrimp oil, then remove the shrimp shells and onions.
- 4

Add carrots and seafood mushrooms to the pot and stir-fry.
- 5

After the seafood mushrooms release water, add hot water to the pot.
- 6

When the water boils, add the broccoli
- 7

Then add the shrimp
- 8

Then add the fried eggs, cook for 2 minutes while boiling, season with salt, and then turn off the heat.
- 9

Serve the bowl and start eating.
