Calf Chocolate Mousse Cake

Calf Chocolate Mousse Cake

Calf Chocolate Mousse Cake made with milk, egg yolk and light cream, baked until light, fluffy and golden. A great choice for family gatherings or a weekend treat.

Instructions

  1. 1
    Step image

Prepare the cocoa cake slices in advance, and cut out two round slices slightly smaller than a 6-inch round mold.

  2. 2
    Step image

Soak gelatin sheets in cold water.

  3. 3
    Step image

    Prepare the white chocolate.

  4. 4
    Step image

Mix the egg yolks, milk, and light cream in ingredient A, and stir evenly.

  5. 5
    Step image

Heat over low heat while stirring constantly until thickened, ensuring that when you scrape the bottom of the pan with a spatula it does not flow, then pour into the white chocolate and stir until combined, then add the soaked gelatin sheets and stir until dissolved.

  6. 6
    Step image

Mix material B and beat until it reaches a medium stiffness.

  7. 7
    Step image

    Sift 5 into 6.

  8. 8
    Step image

    Mix well.

  9. 9
    Step image

Take an appropriate amount and pour it into the calf silicone mold, then place it in the freezer.

  10. 10
    Step image

First, lay a slice of cake at the bottom of the one-inch round mold, then pour in an appropriate amount of mousse batter.

  11. 11
    Step image

Put it in the fridge to slightly freeze until it is partially set, then place another slice of cake on top and pour in the mousse mixture.

  12. 12
    Step image

Refrigerate overnight, or for at least 4 hours.

  13. 13
    Step image

Melt a little dark chocolate over a double boiler, find your favorite text on your phone, place a transparent scraper underneath, use the chocolate to outline the letters, and refrigerate to set.

  14. 14
    Step image

Use a hair dryer or a hot towel to unmold the round mousse, then place the letters on it.

  15. 15
    Step image

Glazing: Put ingredient C into a container, and stir while heating over a water bath until smooth.

  16. 16
    Step image

Put it into a piping bag, keep it at about 40 degrees, pipe a circle around the cake, and place the fruits and the unmolded little cows on top. I used sugar beads for the little cows' eyes.
