candied garlic
Loose garlic cloves soak in a simple one-to-one blend of rice vinegar and sugar, turning soft, sweet, and wonderfully gentle on the palate.
Instructions
- 1

The new garlic has come in, make some candied garlic.
- 2

Break the garlic into cloves. A whole head of garlic takes up some space, but after breaking it apart, you can fit more.
- 3

Wash the garlic cloves and drain them.
- 4

Let the garlic cloves air dry to remove the moisture.
- 5

Rice vinegar and white sugar are generally mixed in a 1:1 ratio; if you like it a bit sweeter, add a little more sugar.
- 6

Take a small pot and first add rice vinegar. Turn on low heat and add white sugar, stirring constantly with chopsticks to fully dissolve the sugar. You can taste it, and if it’s not sweet enough, you can add a little more. Once it starts to bubble slightly, you can turn off the heat and let it cool for later use.
- 7

Heat the utensils with hot water and set aside. Place the dried garlic cloves into the utensils, add the cooked rice vinegar, seal the lid, and store in a cool place. The sweet garlic is then ready. The longer the sweet garlic is stored, the more flavorful and delicious it becomes 😋.
