Carrot Watercress Pork Rib Soup
A nourishing Cantonese soup of blanched pork ribs, sweet carrot, and apricot kernels simmered long, with peppery watercress stirred in at the end to keep its fresh green bite.
Instructions
- 1

Watercress is washed. (The watercress I buy is sold by the bunch, all tender tips.)
- 2

Peel the carrot and chop it into pieces.
- 3

Clean the north and south almonds.
- 4

Blanch the ribs in boiling water to remove the foam.
- 5

Put the pork ribs, carrots, and north and south almonds into a soup pot, add 8 cups of water, bring to a boil over high heat, then reduce to medium-low heat and simmer for 30-40 minutes.
- 6

The soup has been simmered for 40 minutes.
- 7

Add the watercress and cook on high heat for 10 minutes.
- 8

Just add salt to season.
- 9

Seasonal soups and broths that are fresh and moist for early autumn.
