Casual egg fried rice
A no-fuss fried rice of tiny carrot, cabbage, onion, and luncheon meat dice, deliberately light on onion so the grains stay dry, fluffy, and aromatic.
Instructions
- 1
Prepare a small section of green onion, take out 1/4 of an onion, and half a carrot, and cut them into small cubes smaller than rice grains. Do not add too much onion, because onions contain too much moisture; adding too much will create too much steam in the pan, and the smell will be too strong.
- 2
Cut the cabbage into small cubes about one centimeter on each side. Because cabbage is somewhat hard and shrinks only slightly, if the pieces are too small they will be hard to find, and if too large they are difficult to stir-fry through.
- 3
Take another small piece of luncheon meat and dice it; the amount depends on personal preference. Don't put away the remaining onion; you'll need it later.
- 4
Start cooking. Heat the pan and add oil to fry the eggs. I like not breaking the eggs, but frying them whole. First, frying the eggs this way separates the egg whites and the yolk, making them more pleasant to eat. Second, frying eggs requires a lot of oil, and adding more oil can also coat the pan to prevent the fried rice from sticking later.
- 5
After the eggs are fried, add onions and green onions, and stir-fry until fragrant.
- 6
Then add the carrots and cabbage. These two vegetables have less water, so after adding them, quickly sprinkle salt and soy sauce—on one hand to draw out moisture and make them soften quickly, and on the other hand to complete the seasoning, so there is no need to add more seasoning later.
- 7
After the carrots and cabbage have softened, add the leftover rice. The rice can be soft or hard; if it's soft, add more oil and stir-fry a bit longer, if it's hard, stir-fry a bit less, it doesn't really matter.
- 8
Fry the rice a little longer. There's no need to add more seasoning here, otherwise the flavor will be too strong; I personally prefer my food on the bland side. This is the finished product, though it doesn't look very appealing.
- 9
It looks like this kind of thing, but I think fried rice shouldn't overshadow the main ingredient. The rice is the star, and the other ingredients shouldn't stand out more than the fried rice. It's just personal preference.
- 10
Slice the remaining 3/4 of the onion, add a little sweet bean sauce, and a few cloves of garlic to help cut the greasiness. Open a bottle of drink, take a bite of fried rice with a bite of garlic, a bite of onion with bean sauce, and then a sip of sweet soup. So comfortable!
