Cauliflower and Sea Cucumber Soup

A delicate, celebratory soup pairing rehydrated sea cucumber with cauliflower, prized for its springy texture and clean, luxurious flavor in a light broth.

Instructions

First, put the sea cucumber in an oil-free container and soak it in purified water for two days, changing the water every other day. After two days, take it out and use scissors to remove the mouth and teeth from the head of the sea cucumber. Then put it in an oil-free pot and cook for 40 minutes. After that, soak it in purified water for another two to three days. Look, it's quite big. If you can't eat this much, you can wrap each one in plastic wrap and freeze them, so it's more convenient to take them out when you want to eat.

Today I got 4 pieces~ Cut each sea cucumber into 4 or 2 sections, chop the ginger finely and add it in, first marinate with cooking wine, salt, MSG, and sugar for 20 minutes~ Cut the cauliflower into pieces, and the radish as you like~ Cut and set aside.

Stir-fry cauliflower and radish in a hot pan ~ In a small clean pot, bring purified water to a boil.

Stir-fry the cauliflower, add some salt, put it into a large bowl of water, and boil until cooked~ Meanwhile, in a small pot of boiling water, add the sea cucumber and cook for a while; both should be boiling around the same time~ Pour the sea cucumber into the cauliflower and boil once more, add some MSG, sprinkle some chopped green onions, and it's ready.

Cooking sea cucumbers like this won't make them shrink too much, and they're crispy and very tasty~ They can also be added to other dishes.
