Chaoshan Poison
Swimming crab is cleaned, trimmed to the roe, and chilled in a punchy raw marinade, a famously addictive Chaoshan delicacy whose nickname says it all.
Instructions
- 1

Buy live swimming crabs and clean them thoroughly.
- 2

Suck dry the water and put it in place.
- 3

Pour in half a bottle of high-proof white liquor and soak for 20 minutes to sterilize. Note: Do not use sauce-flavored liquor.
- 4

Rinse off the white wine again using filtered water or cooled boiled water.
- 5

Then pry open the shell, trim the edges with scissors until you see the paste, tap the legs with a knife, and put them into a container.
- 6

Add the ingredients.
- 7

Prepare the bowl sauce: (Mix 1 tablespoon of sugar, 1 teaspoon of salt, and a little MSG into plain water until dissolved) a little mustard, half a small bottle of Japanese soy sauce, add some mineral water to cover the ingredients, and finally drizzle with sesame oil.
- 8

Stir it like this.
- 9

Cover with plastic wrap and refrigerate for 3 hours.
- 10

That fresh sweet taste makes you...
