Chayote, Chestnut, Carrot, and Lean Pork Soup
A naturally sweet Cantonese slow-cooked soup of chayote, chestnuts, carrot, figs, apricot kernels, and lean pork, needing no salt thanks to its gentle, honeyed, chestnut-sweet flavor.
Instructions
- 1

Wash the chayote, cut it in half, remove the seeds, and cut it into small pieces.
- 2

Peel the carrots and cut them into pieces.
- 3

Clean the northern and southern apricot kernels.
- 4

Cut the fig in half to release its flavor.
- 5

Blanch the lean meat.
- 6

Wash the chestnuts. (I used frozen peeled chestnuts.)
- 7

Put all the ingredients into the electric pressure cooker and press the soup button to start cooking.
- 8

It's done cooking.
- 9

No need to add salt; this soup is very naturally sweet.
- 10

Cools and soothes internal heat, strengthens and nourishes the body.
