Chicken Drumstick Clay Pot Rice
Clay pot-style rice topped with glazed chicken drumstick chunks, caramelized with rock sugar, and paired with mushroom, potato, and carrot for hearty, gently sweet comfort.
Instructions
- 1
Carrots, potatoes, onions, and cabbage are diced. Shiitake mushrooms are sliced.
- 2
Clean the boneless chicken thighs and put them in a pot to cook until 70% done. Skim off the foam during the process. (The chicken broth can be used to cook noodles)
- 3
Let the chicken leg cool and cut it into pieces.
- 4
Heat the wok, add oil and rock sugar.
- 5
Melt the rock sugar until it changes color, then add the chicken thighs and stir-fry evenly.
- 6
Add the carrots.
- 7
Add the shiitake mushrooms.
- 8
Add the potatoes.
- 9
Stir-fry evenly and turn off the heat.
- 10
For a rice cooker, add this high-quality rice with about the same amount of water as usual. If you like it softer, just add a little more.
- 11
Add the stir-fried side dishes together. Press the cook rice button.
- 12
Prepare the sauce while cooking the rice. Mix light soy sauce, dark soy sauce, oyster sauce, pepper, ginger powder, chopped green onions, sugar, and sesame oil evenly and set aside.
- 13
It's cooked.
- 14
Spread the cabbage.
- 15
Pour the sauce over.
- 16
Stir slightly. Cover again and press the quick cook button.
- 17
Alright! The chicken leg version of claypot rice has gone off track!
- 18
Plate the dish.
- 19
Let's start eating!
