Chicken Meatball Spinach Soup
A light, wholesome soup of tender chicken meatballs and sliced shiitake simmered in stock with blanched spinach for a fresh, clean flavor and delicate texture.
Instructions
- 1

Prepare the ingredients (soak the shiitake mushrooms in advance and cut them into shreds).
- 2

Cut the spinach into large sections.
- 3

Bring a pot of water to a boil and blanch the spinach (this can remove oxalate).
- 4

Blanch the spinach in cold water and set aside.
- 5

Pour the broth into the pot.
- 6

Add the shiitake mushrooms (you can also add a little of the water used to soak the mushrooms) and cook until done.
- 7

Cook the chicken meatballs.
- 8

Add salt, chicken bouillon, and pepper to the cooked chicken meatballs for seasoning.
- 9

Add the blanched spinach.
- 10

Remove from the wok.
- 11

Let's start eating (because it contains water from soaked shiitake mushrooms, please ignore its appearance, but it's quite tasty, full of the aroma of shiitake mushrooms).
