Chicken Soup Buckwheat Noodle Nest Exclusive
Pinched buckwheat dough nests, hand-rolled into small ridged curls, cooked and served in savory chicken broth with diced potato and shiitake for a hearty, chewy northern-style soup.
Instructions
- 1
Mix buckwheat flour and white flour together, add a little salt, pour in hot water and stir into flour clumps, then knead into a smooth dough. Each time, pinch off a piece about the size of the tip of your little finger, roll it into a long strip, then use your thumb and index finger to pinch it into a patterned dough nest as shown in the picture. (It was a bit difficult at first, but practice makes perfect; this is my second time making it.)
- 2
Cut the potatoes into small cubes and soak them in water. Wash the shiitake mushrooms and also cut them into small cubes.
- 3
Chop the scallions.
- 4
Clean the rapeseed and set aside for use.
- 5
Add chicken broth to the pot and bring it to a boil.
- 6
Add the diced ingredients into the fragrant pot.
- 7
Diced potatoes.
- 8
Add an appropriate amount of salt, simmer over low heat until the potatoes are soft, then add the buckwheat dumplings.
- 9
Cook for about 10 minutes, then add the bok choy.
- 10
Once the rapeseed is cooked, add a little pepper and MSG, then add chopped green onions.
- 11
Finished product.
