Chicken Soup with Pork Stomach (One Soup, Two Dishes)
A classic Hakka soup where a whole chicken is stuffed inside a cleaned pork stomach with white pepper, codonopsis, astragalus, and red dates, simmered into a peppery, deeply nourishing broth.
Instructions
- 1

Prepare the ingredients first: one pig stomach, one whole chicken, appropriate amounts of codonopsis root, astragalus, wolfberries, lily bulbs, and white pepper, 2 red dates, 2 small pieces of dried tangerine peel, and 2 small slices of fresh ginger.
- 2

Next comes the most complicated step: cleaning the pig stomach. Remove the outer layer of fat from the pig stomach, then turn the inside out to clean it. Add starch and rub to clean it. I was worried it wouldn't be clean, so I rubbed and cleaned it with starch several times!
- 3

After cleaning it with starch, I then marinate it in white wine and salt for 10 minutes. Rub and wash it, this can remove the fishy smell. After washing, my hands don’t have that pork belly smell, this is what my dad taught me. Hehe

Clean the whole chicken thoroughly; I removed both the head and the tail. Turn the cleaned pig stomach right side out, slightly widen one end of the opening, and slowly stuff the chicken into the pig stomach.
- 5

After wrapping the entire chicken inside the pig's stomach, sew the opening with toothpicks.
- 6

Put it in a pot with cold water and bring it to a boil to remove the bloodiness. Once boiled, pour it out and rinse with cold clean water for later use.
- 7

Put all the ingredients into a clay pot and cook. Once the water boils, turn to low heat and simmer. It will take about two hours!
- 8

The soup will release oil after about an hour of simmering, and I skim off the oil foam while simmering.
- 9

Two hours later, the rich pork stomach stuffed with chicken soup will be ready. Are you drooling? Take out the pork stomach and chicken, let them cool, and get ready to cut them into pieces!
- 10

Haha, it's chopped. The chicken is left whole, hehe.
- 11

This is a dipping sauce for vegetables, and it can be adjusted according to personal taste! Here's how I made it: heat oil in a pan and sauté chopped scallions and ginger until fragrant, then add soy sauce, oyster sauce, salt, sugar, pepper, and cilantro, and stir to mix.
- 12

After the dishes were chopped, they had cooled, so I steamed them again in a steamer. One soup, two meat dishes, and a stir-fried green vegetable are enough to start the meal!
