Chickpea Rice
Chickpea rice with pressure-cooked chickpeas folded into butter- and oil-scented rice cooked alongside, creamy beans and fluffy grains in a mild, wholesome pilaf.
Instructions
- 1

Add two times the amount of water and a small spoon of salt to the chickpeas, and soak overnight.
- 2

The next day, after washing, pour into the pressure cooker with enough water and a small spoon of salt. Cook over medium heat for 25-30 minutes once it reaches pressure.
- 3

Drain and set aside once fully ripe.
- 4

Add warm water and a small spoon of salt to the rice and soak for an hour.
- 5

Rinse the rice until the washing water is clear, then drain and set aside.
- 6

Add salad oil, butter, and olive oil to a non-stick pan and heat until the butter begins to melt.
- 7

Add the rice to the pan, gently stir-fry, until the grains become glossy and translucent. Add salt, pepper, and a small spoon of sugar.
- 8

Add the chickpeas, a cup of chicken broth, half a cup of hot water, and a small spoon of lemon juice.
- 9

After the fire comes to a boil, turn the lid to the lowest heat and cook for 10-15 minutes.
- 10

Check that there is no excess water in the rice. After stirring the rice at the bottom of the pot a few times, turn off the heat, cover it, and let it steam for another 5-10 minutes.
- 11

Prepare a piece of cooked chicken breast and tear it into small pieces.
- 12

Serve the rice together with the chicken on a plate.
