Chilled Green Cowpeas
Yardlong beans are blanched with a pinch of salt to lock in their jade color, then tossed with garlic, red chili rings and a bright vinegar dressing.
Instructions
- 1

Wash the cowpeas and cut them into sections, blanch them in boiling water, and add a little salt or oil (to maintain the bright green color).
- 2

Blanch until just cooked, then remove and rinse in cold water to make it bright green.
- 3

Sauce.
- 4

First, pour the cowpeas into an appropriate amount of sesame oil and mix them to keep them shiny, then add minced garlic, red pepper rings, and salt, and mix them evenly.
- 5

Pour in the sauce and mix until evenly combined. A dish of green, fresh, and crisp yardlong beans is very appetizing.
