Chinese Yam Stewed Chicken Soup
A warming Cantonese-style soup of old hen simmered low with Chinese yam, red dates, shiitake, and ginger until the broth turns golden, deeply savory, and naturally sweet.
Instructions
- 1

Freshly slaughtered old hen, buy it and wash it clean. (I asked the seller to cut it for me)
- 2

Clean the prepared red dates, shiitake mushrooms, and ginger, and slice the ginger.
- 3

Put the chicken into boiling water to remove the blood, and cook for about one minute.
- 4

Take out the chicken and rinse it clean.
- 5

Put it into the clay pot.
- 6

Pour in an appropriate amount of water. (Water should cover the chicken by about the depth of one finger)
- 7

Cover with the lid, bring to a boil over high heat, and skim off the foam.
- 8

Add the shiitake mushrooms, red dates, and ginger slices, cover with a lid, and simmer on low heat for three hours.
- 9

During the cooking process, peel and wash the yam. (Wear gloves when handling yam to avoid itchy hands, or ask the seller to peel it for you)
- 10

Cut into roughly equal small pieces.
- 11

Put the Chinese yam into the chicken soup that has been simmering for three hours, and continue to simmer for half an hour.
- 12

Turn on high heat, add an appropriate amount of salt, cook for one minute, and then turn off the heat.
