Chive and Egg Dumpling Soup
A quick homestyle soup with chewy egg-flour dumpling bits, poached egg, and aromatic chives simmered in a savory stock for a warming springtime comfort bowl.
Instructions
- 1

Ingredients: Cut the Chinese chives into sections, chop the green onions. Beat an egg into the flour and stir with chopsticks until it forms lumps. If it's too dry, you can sprinkle a little water.
- 2

Heat oil in a pan, sauté the white parts of the green onions until fragrant, and add half a teaspoon of five-spice powder.
- 3

After stir-frying the soy sauce until fragrant, add two soup bowls of water, and crack another egg into the pot.
- 4

Add half a cube of concentrated soup base.
- 5

Cook the eggs until they are half-cooked, then sprinkle the dough pieces into the pot.
- 6

Cook for three minutes, then add the chives.
- 7

Sprinkle chicken bouillon and turn off the heat; it's done.
