Chive and Egg Pastry (No Leavening)
Golden half-moon pockets of unleavened dough pan-fried until blistered and crisp, packed with a juicy filling of chives, soft scrambled egg and a whisper of five-spice.
Instructions
- 1

Choose good chives, wash them clean, drain the water, and set aside. Chop them finely. Crack the eggs into a bowl, add a little salt, and beat them. Heat the pan, add an appropriate amount of oil, pour in the beaten eggs, and stir-fry briefly, breaking them into small pieces with a spatula. Put the chives and egg pieces into a bowl, add a suitable amount of salt and a little five-spice powder, and mix evenly.
- 2

Mix pure water with the flour to make a slightly soft dough, let it rest for 15 minutes, and knead into a smooth dough.
- 3

Roll into long strips and divide into even portions.
- 4

Roll it into a round pancake shape.
- 5

Wrap the filling.
- 6

Already wrapped.
- 7

Heat a frying pan and add a little oil, then put in the pancake base.
- 8

Flip it over.
- 9

Cook over low heat until both sides are golden brown.
- 10

Take it out of the pot and serve it on a plate.
- 11

Sliced, easy to eat, and aromatic.
