Chopped chili sauce
Hunan's iconic chopped-chili condiment, its raw fire softened by a brief fermentation and a splash of strong liquor that keeps the jar clean and safe.
Instructions
- 1

Let the washed red chili peppers air dry naturally to remove the moisture.
- 2

Chop into fine granules.
- 3

Ginger and garlic are both chopped.
- 4

Add salt and sugar.
- 5

Stir evenly.
- 6

Take a clean container and make sure it is free of oil and water, otherwise the chopped chili sauce is prone to spoil.
- 7

Put the mixed chili into a container, then add a large spoon of high-proof white liquor to seal it, to prevent bacterial growth.
- 8

Finally, let it ferment at room temperature in a sealed container for a day or two, then transfer it to the refrigerator for cold storage and use it after more than half a month. By then, the taste of the wine will also be gone.
