Clam and Loofah Soup Exclusive
Fresh loofah and purged clams simmered just until the shells open, yielding a delicate soup where sweet sea brine meets tender, silky gourd.
Instructions
- 1

Buy clams and put them in a large bowl to purge sand for 4 hours
- 2

Peel the loofah and cut it into large dice, and finely chop the scallions, ginger, and garlic.
- 3

Heat the pan and add an appropriate amount of oil, then add scallions, ginger, and garlic and stir-fry until fragrant.
- 4

Add the loofah and stir-fry for a moment
- 5

Add the clams
- 6

Pour in an appropriate amount of water
- 7

Add cooking wine
- 8

Boil until all the clams open
- 9

Add an appropriate amount of salt for seasoning, but don't add too much, as it can overpower the freshness of the soup. There's no need to add MSG for flavor because the clams are naturally very fresh.
- 10

Completed.
